Fizzy refreshing BIWAKO cider
The Premium Marche BIWAKO restaurant in the Yanmar Museum offers rice-based seasonal dishes with fresh and delicious local ingredients. While trying to create a menu that connects food, nature and people, and pursues a new richness of food, there was desire to create something that conveys the uniqueness of Shiga Prefecture and Lake Biwa. With that in mind, we chose to use butterfly pea cultivated in our hometown of Nagahama-shi and create BIWAKO Cider, a beautiful blue color drink reminiscent of Lake Biwa.
It is a three-layers drink consisting of butterfly pea syrup, which is a natural blue color pigment, butterfly pea jelly made of agar, which is characterized by its plump texture, and cider, with pineapple on top. If you squeeze the attached lemon tightly and mix it well, it will change color from blue to purple gradually. The cider that you can drink while enjoying the color change is fizzy and refreshing.
Also it goes well with jelly that feels good on your throat, and it feels a little addictive. “It’s not an artificial one, it’s a natural pigment blue color. So you can drink it with confidence for safe. It’s very popular with children,” says Rena Minegishi, who is in charge of the restaurant.
